Tortellini is an excellent choice when meal planning as it’s budget-friendly. Tortellini comes in different shapes and is filled with ricotta cheese, spinach, or meat.

If you are adventurous and want to make fresh Italian tortellini, they would beat out any store-bought brand, but it can be time-consuming.

Since we have a busy toddler running around and I work two jobs, we’re cheating today with frozen ricotta stuffed tortellini for this 30-minute meal.

Since having our son, meal planning has changed slightly in the CBB kitchen.

Until he’s older, we must compromise on some store-bought items that we usually make at home.

I’ve been a tortellini lover for years now because when I lived in the UK, tortellini was inexpensive to buy and fit my tight budget.

What I like about tortellini is how you can bulk out the meal with meat and vegetables to stretch it.

Back then, I would eat tortellini about twice a week, every week, whether it be chicken tortellini soup or a quick pasta dish.

I tried to create tortellini recipe ideas because eating the same foods can get boring.

Tortellini pasta can be paired with a cream or standard Italian pasta sauce.

Some of our Italian pasta sauces cook for 8 hours, but you don’t have to wait that long to enjoy a delicious, healthy pasta meal.

Types Of Tortellini

Most standard-filled tortellini will be stuffed with either beef, spinach, or ricotta cheese, although you can fill them with whatever you like.

Tortellini is the same as ravioli or any other stuffed pasta except for a different shape.

How To Cook Tortellini

Tortellini is cooked like any other pasta on the stovetop.

Take a large pasta pot, fill it with cold water, add salt, and bring to a boil.

Add tortellini and wait until they float, which takes 5 to 7 minutes.

Once they surface, your pasta is done, but test one to ensure it is Al Dente.

You don’t want mushy tortellini; trust me, I’ve been there and done that.

What To Serve With Tortellini

When I make a tortellini dinner or lunch like this, I almost always have a vinaigrette dressing with a garden salad.

There is something delightful about cleansing the palate after eating pasta that makes salad a perfect fit.

If you want bread with your tortellini dish, by all means, grill some garlic bread with mozzarella as a side.

I won’t judge you because I’d eat it too. Delicious.

How To Make A Quick Pasta Sauce

The key to my quick pasta sauce is using tomato passata and chopping your vegetables small.

I also like tender sausages in my sauce, so I boil them to pre-cook them before I fry them.

You will want to cook your sauce on high heat, then reduce the sauce to simmer for 15 minutes.

What is tomato passata?

Tomato Passata is also known as Tomato Passato or Passata di Pomodoro.

It seems as if passata is an uncooked tomato puree that has been strained of seeds and skins. It originated in Italy but is used throughout Europe.

Ingredients

  • 1lb bag of tortellini pasta
  • large pot of cold water
  • 1 teaspoon salt in water
  • Pasta Sauce
  • 1 500ml jar of Tomato Passata (Jar of tomatoes)
  • 1 tablespoon tomato paste
  • 1 medium onion diced
  • 2 cloves of minced garlic
  • 1 carrot chopped small
  • 2 celery stalks chopped small
  • 2 tablespoons dry basil
  • 2 tablespoons dry oregano
  • 1 cup of cold water
  • 1 teaspoon sugar
  • 2 tablespoons extra virgin olive oil
  • 1 package of 5 fresh sausages

Instructions

  1. In a small pot, fill halfway with cold water and boil.
  2. Add your sausages and boil for 2 minutes. Remove and set aside.
  3. Add your garlic, olive oil, and sausages in a saucepan and saute until golden brown, about 5 minutes.
  4. Remove from the frying pan, let rest 1 minute, then slice and add back into the frying pan.
  5. Add your carrots, celery, and onion and saute for 2 minutes, then add your passata tomatoes, tomato paste, basil, oregano, water and sugar.
  6. Bring to a medium boil, then reduce to simmer for 15 minutes.
  7. Add the sauce to the tortellini and mix.
  8. Top each plate of tortellini with freshly grated parmigiana Regiano or Romano cheese.
